Atchara - Filipino Pickled Vegetables

Atchara (atsara) is a Filipino pickled appetizer - a mix of sweet and sour taste!

Ingredients: 
  • 2-3 Singkamas (sliced like french fries)
  • 1 carrot, cut out to look like flowers
  • 1 red /green bell pepper (cut into strips0
  • 2-4 shallots, peeled and cut into halves or quarters
  • 1 cup vinegar
  • 1 cup white sugar
  • 1/2 T sea salt
  • 1/2 thumb size ginger
  • 1 t whole peppercorn
Procedure: 
  • Slice vegetable accordingly.
  • Put the cut vegetables in a jar/ bottle.
  • Place the colorful vegetables in the side.
  • In a sauce pan, mix the remaining ingredients until boil and sugar is fully dissolved.
  • Put the sauce in the jar while hot.
  • Let it cool and cover tightly.
  • Keep refrigerated. The flavors will infuse to the vegetables in 2-3days.
